Description
Reims Champagne-Ardenne Clovis vinegar is a traditional French wine vinegar produced in the Champagne region around Reims, using the same grape varieties found in Champagne—typically Chardonnay, Pinot Noir, and Pinot Meunier. It is made from local wines and then aged in oak barrels, which develops its signature amber color and layered aromatic profile.
The result is a refined vinegar with a balanced acidity and a distinctly vinous character. It often shows notes of white wine, toasted wood, almond, walnut, and sometimes subtle honeyed or dried fruit nuances, especially in longer-aged versions. Depending on the aging (commonly 12 months to several years), it can range from bright and lively to deeply complex and mellow.
Clovis Reims vinegar is widely regarded as part of the culinary heritage of the Champagne-Ardenne region, and it is often used by chefs for vinaigrettes, pan sauces, and deglazing meats or seafood, where its elegant acidity enhances dishes without overpowering them.
